Salmon Lodeh

This Salmon Lodeh Fusion combines the richness of salmon with the bold flavors of Indonesian Lodeh, a traditional vegetable stew. The Wahyu Brand Lodeh instant cooking paste makes it easy to create this delicious dish at home.


Ingredients:
- 2 salmon fillets (6 oz each)
- 2 tablespoons Wahyu Lodeh instant cooking paste
- 2 medium-sized onions, chopped
- 1 cup coconut milk
- 1/2 cup water
- 50g of butter
- Salt and black pepper
- Red chilli, cherry tomatoes and parsley for garnish
- Steamed rice or roti for serving

Instructions:
1.Season salmon fillets with black pepper and salt evenly.
2. Heat butter in a pan and add salmon fillets, skin side up (if they have skin). Cook for 2-3 minutes then put aside.
3. Roast cherry tomatoes on the same pan and cook until they start to soften before putting aside.
4. Saute chopped onions and add Wahyu Lodeh paste and stir-fry for 1 minute.
5. Pour in coconut milk and water. Bring to a simmer.
6. Reduce heat to low and cook for 8-10 minutes.
7. Serve on top of cooked salmon. Plate with cherry tomatoes, garnish with parsley and chopped chilli, serve hot with steamed rice or roti.

Note: You can adjust the amount of Wahyu Lodeh paste to your desired level of spiciness and flavour.

Tips:
- Use a variety of colorful vegetables to make the dish visually appealing.
- Add other protein sources like shrimp or tofu for added texture.
- Substitute coconut milk with Greek yogurt for a creamier sauce.
- Serve with steamed rice or roti for a complete meal.
